Oca

Tubers. Root vegetables called oca tubers are indigenous to South America’s Andes Mountains. It is also referred to as a Peruvian or New Zealand yam. Oca tubers are starchy in texture and have a little sweet flavor. The food can be consumed raw, cooked, or roasted. Oca with chili.

Ogo

Leaves. Seaweed with a fluffy texture and a reddish-brown tint is known as ogo (also known as ogonori or gracilaria). Like other seaweeds, ogo has a taste of the water and a crunchy texture. Either cooked or raw salads can be made with it. Agar also uses ogo as a vegetarian gelatin substitute. Hawaiian poke frequently uses ogo.

A type of sea vegetable is ogonori. The diet of the Philippines, Japan, and occasionally Hawaii frequently includes this red algae. Intriguingly, Jamaicans refer to it as Irish moss.

Oil Palm

Seeds. A palm tree native to Africa is called an oil palm (Elaeis guineensis). The oil seed of the oil palm is used to make palm oil, a form of edible vegetable oil.

Two distinct species of palm trees—one from Africa and the other from South America—are classified as oil palms. Although they are not commonly consumed whole, they are used to make palm oil, which is a component of many meals.

Okinawan Sweet Potatoes

Roots. Sweet potatoes of the sort known as “Okinawan sweet potatoes” are indigenous to the Japanese island chain of Okinawa. These sweet potatoes stand out thanks to their diminutive size, stubby shape, and light purple skin.

Okra

Pods and seeds. African, Caribbean, Indian, Creole, and Cajun cuisines all use okra as a vegetable. Okra’s alternate name, Lady’s Fingers, refers to the edible long, ridged, tapering seed pod. The flavor of okra is mild and delicate. It contains a viscous liquid inside that is frequently used to thicken stews and other foods. As a side dish, it can also be fried whole. Okra can be used without becoming slimy, though. They can be grilled, fried, sautéed, pan-roasted, or pickled. The green pods won’t get slimy when prepared using these procedures. They will get crunchy if you cook them quickly, but they will become incredibly soft if you cook them slowly.

The only steps in the preparation are to rinse them, chop them, or use them whole. Additionally, they are added to soups and stews to thicken them.

Olive

Fruits. Although olives are technically a fruit because they are used in savory dishes, in the context of food, they are considered a vegetable. Though they are too salty to count toward your 5-a-day because they have been brined. Try them in Sicilian caponata.

While older leaves can be cooked like spinach, younger leaves can be consumed raw in salads. You can gather it in the wild or buy it at farmer’s markets. As a simple side dish, try sautéing some spinach with some butter, garlic, and chile.
